Kikunotsukasa Shuzo was established in 1772 in Morioka, Iwate Prefecture (very north, very cold).
It’s produced using organic Kameno O sake rice grown in Miyagi Prefecture.
Implementing the Kimoto method (a labor intensive and traditional way to encourage yeast growth) to create the Shubo (starter).
Fermented for 3 weeks at a low temperature and no active carbon filtration.
Pasteurization occurs 5 days after pressing.

I tried it at room temperature as well as at around 40℃ and both ways were beautiful! The Kimoto method creates lactic acid which gives this sake very slight acidic creaminess.....think malolactic fermentation in wine making.
Clean, delicately creamy with a subtle nose, medium body and a dry finish.
Delicious!
