Introducing our second Piquette. A bit different to last year, this one is made from the same Sauvignon Blanc skins sourced from our mate Pat down the road but also has Chardonnay skins and honey from our hives here at the farm. We lightly foot stomped the already-pressed skins to extract the remaining sugar and then left them to macerate for 6 days before being basket pressed to tank and bottled with the honey that we harvested a few weeks prior. Hand disgorged (messily) by us 8 months later. Fizzy, skinsy and zesty with a slight waxy wildness coming from the honey. 7% ABV, 100% thirst quenching, zero additions, 640ml.
