Fizzy & Fruity, with notes of fresh strawberries, zesty citrus, toasty brioche and refreshing acidity. Drinks well with spicy food, a cheese board or a lazy afternoon in the sun. Serve Well Chilled!

We hand picked this vineyard ourselves, selecting the best bunches for sparkling wine. The grapes were transported to our winery, where they were basket pressed immediately to barrel. Once the natural fermentation was complete the wine was transferred to tank on its fine lees, where it was allowed to rest for a further 11 months, gaining texture and complexity. A portion of the juice was frozen at the time of pressing, which was added back to the wine at the time of bottling. This additional sugar starts off a second fermentation in bottle, producing carbonation which is trapped in the bottle. The end result is a "Petillant Naturel" sparkling, better known as Pet-Nat.
Due to this bottle fermentation, a layer of sediment will appear in the bottle. These dead yeast cells (lees) are harmless, and can even add texture if gently rolled into the wine before opening. Just remember to serve this wine well chilled to prevent it from foaming over when opening. Bottled, sealed, and labelled on site by the loving hands of family. Minimal sulphur was added at bottling.
