Hand picked Mataro from the deep sands of Vine Vale was blended with hand picked Grenache from Greenock. Both vineyards are certified organic and biodynamic, which is a huge plus for us, and the fruit from both vineyards looked incredible!
The grapes were whole bunch pressed using a bag press, to minimise colour in the wine. The natural yeast found on the grapes took care of the alcoholic fermentation, which took place as two separate ferments- one Mataro ferment and one Grenache ferment. The Grenache ferment took particularly long this year, and fermented well into June before it was dry. As a result, the wine has spent more time on lees, which has helped build more structure and savouriness into the wine.
This is definitely the most complex and interesting Rosé we have made so far, and our new favourite!
Smells like pomegranate, pink grapefruit, red apple and raspberries.
Tastes like watermelon and pink grapefruit, and has a nice creaminess at the finish thanks to the extended time on lees.
