IGP Pays d'Oc-South of France. This region benefits from the Mediterranean climate. With its coastline bordering the region in the South, it provides hot and dry summers for a perfect maturity. On the other side, the Black Mountain brings enough humidity and cool temperatures for the vineyards to produce grapes packed with fruity aromas. It is the patchwork of wine-growing areas that create an expression of these grape varieties that are unique. This allows us to produce a versatile range of wines reflective of the region.
Harvested during the night to keep the acid levels at their optimum, the grapes are pressed and the first juices are selected to enhance the wine's golden colour. The fermentation is led between 12 to 17 degrees, on French oak to empower the Chardonnay roundness. Once ferment is complete the wine is bottled and aged until due for release.
Elegant medium bodied chardonnay with striking fresh citrus fruits, balanced with notes of peach, green apple and white pear. Rich and round toasted notes followed through by struck match.

Fruit is harvested at night when the temperatures are low to prevent oxidation. Following to the saignée process, the juices stay in contact with the skins during a short time before being drained off, so they absorb all the aromas from the skin and gain its beautiful colour. Fermentation is carried out at low temperature to retain the subtle fruit flavours. The wine stays on fine lees for at least two months and is stirred periodically providing a smooth texture.
A fresh rose with delicate strawberry and red fruit characters leading to a vibrant finish. Well balanced with a concentrated impression and a fruity finish.

The fruit is picked earlier to ensure we retain the delicate aromas, bright flavours and balanced acidity in the final wine. The fruit is destemmed, sorted and transferred into fermenters for a period of cold maceration to extract colour and tannin. The ferment spent 15 days on skins followed by daily pipeage. Malolactic fermentation followed in steel tanks. After a period of 4 months on fine lees, the wine is racked and bottle.
Plush notes of raspberry and cherry follow through from hints of mushrooms and vanilla. A light-bodied, silky and refined wine.

IGP Comté Tolosan - Vineyards are located in the Adour and Garonne River basins, between the Atlantic Coast to the west and the Massif Central mountains to the east, with mainly alluvial soils. The climate is predominantly maritime, with mild, fresh summers and cool, wet winters. A small proportion of fruit is selected from vineyards further east that experiences a hotter, continental climate.
Picked at optimum ripeness to enhance the bright flavours but a balanced acidity. The fruit is destemmed, sorted and transferred into fermenters for a period of cold maceration to extract colour and tannin for 12 days. Temperatures remained controlled at 26°C. The juice is drained off the skins and transferred to tank where malolactic fermentation took place. Bottled
Raspberry and plum aromas offer a vibrant and bright palate, complimented by warm, rich spice with a lively line of acidity.

The fruit is destemmed and fermented in open top stainless steel fermenters for a period of 14 days. To assist with the gentle extraction of colour and aromas, gentle pipeage was performed. Following maceration, the fruit was pressed and matured in a selection of concrete and older large format oak for 4 months before bottling.
Soft and supple on the palate with characteristics of red berried and herbes de Provence. a subtle white pepper and tobacco note provides spice, with balanced tannins, body and plushness.

IGP Pays d’Oc - South of France. With its Mediterranean coastline bordering the region in the South, the IGP provides hot and dry summers complimented by mountainous terrain for cooling.
The grapes are harvested at full ripeness. As the fruit is destemmed and crushed to extract all aromatic potential from the skins. Maceration lasts 20 days, with daily pump-overs followed by a long warm fermentation. The juices also go through thermovinification to enhance the wine roundness. Finally, the wine is aged for six months under French Oak.
Intense and complex aromas of red and black berries. Cloves and aniseed structure a bouquet of violet and crushed herbs.
Intensely rich red berry fruits. Undertones of raisin and dark chocolate shine through complimented by classic Cabernet eucalyptus notes. The oak rounds out nicely with vanilla and spice.
