Toji - Maiko Tsuji is very focused on the local terroir and therefor uses local water and rice. Using their own natural method "Gozenshu Bodaimoto' instead of standard Bodaimoto (Mizumoto) to make this slight Nigorizake (cloudy sake).
It's pasteurised.
Green apple nose, lemon sherbet with weight and a nice lingering acidity.
A perfect match with spicy food, chicken with sweet sauce (yakitori) and soft cheeses.
