Shitara Shuzo (est 1896), Suzuki Shuzo (est around 1700) and Yahataya Shuzo
(est 1780) founded Gassan Shuzo located in Yasawa, Yamagata Prefecture in 1972.
The rice used in the production of this sake is Yamadanishiki from Hyogo with a polishing rate of 45%, giving it its ‘umami’.

An easy to recognize big mature ginjo nose of tropical fruit...think melon with the sweetness and acidity of ripened pineapple.
