Ishimoto Shuzo was established in 1907 in Niigata prefecture. This area (Kamedagou) has beautiful high quality spring water and the cool temperature of the location, offers the ideal climate for sake brewing (the word Muku in the name of this sake translates to the word ‘purity’).
Sakamai uses Yamadanishiki from Miki in Hyogo prefecture and the rice polishing ratio is 48%.

Subtle melon like fruit nose but it is very delicate...not a sweet, ripe fruit nose at all.
The palate is also very delicate.
Compared to other Junmai Daiginjo, this is the most subtle in flavour I’ve tried as well as being the driest.
A sophisticated minerality and dryness to finish.
Wine drinkers will like this one!!!👌
