KAYA (Brown) undergoes relatively less polishing to preserve the savory depth of local Nagano sake rice. Mild aromas of brown rice and creaminess lead to fruity and savory umami lifted by clean acidity.
KAYA is named for the brown and gold color of rice fields during the autumn harvest. Pairs broadly with Japanese standards - grilled fish, teriyaki, nabe hotpots as well as robust Western dishes - roast vegetables, meats, dairy and cheese.

SHIRO (White) is our “session sake,” light enough to enjoy any time. Mild aromas of banana and apple lead into the palate. Gentle fruit brightened by acidity and lingering savory umami.
SHIRO is named after a soft white cloth made from tree bark that has the same light and buoyant character as this sake. Pairs well with fresh greens, salads with citrus accents, grilled shrimp & chicken, dairy and cheese dishes.

KURO (Black) starts with delicate aromas of apple and banana, then strikes a balance of savory depth and dry clarity that brings out the best in the food before leaving the palate clean and fresh.
KURO is named after the lustrous black colour of traditional lacquerware. Great for everyday sipping or those special black-tie occasions. It pairs well with shellfish, dark meat fish, and green vegetables—especially those with astringency, like asparagus, artichokes, or rucola.
