AGRONOMIC CHARACTERISTICS

Soil: clayey-calcareous, calcareous-siliceous Exsposure and altitude: east/south-east - 320 m Max crop./hectare: 85 ql/hectars

OENOLOGICAL CHARACTERISTICS
Vinification: soft press and de-stemming, soft, prefermentative maceration and déléstage, fermentation and maceration on the skins for approx. 10/12 days at a controlled temperature (22°C). The must is pumped over at least twice a day to improve the extraction of the color and varietal aromas. The malolactic fermentation is completed right after the alcoholic.
Ageing: 7 months of maturing in steel tanks at controlled temperature and 5 months in bottle.
WINE CHARACTERISTICS
Colour: intense red with violet sparks.
Nose: fresh and fruity, the varietal aromas that are
expressed at the beginning in a red fruit bouquet and then on more complex aromas going from pepper to more balsamic sandal wood notes.
Taste: sapid, full-bodied and characterized by the typical acid note that keeps the wine perfect for every situation.
Storage: 8 years or more, depending on the vintage; it is therefore recommended to store the bottles lying down in a dry place at a cool temperature.
Serving temperature:16/18° C.
Pairing with food: flavorsome soups, white meat and fowl in aromatic stews, grilled meat, stockfish and salt cod, aromatic fish soups, fresh- medium mature cheeses but also chocolate and dry fruits, small pastry.
