We finally got a hold of Janice’s Mataro again. Handpicked fruit the flats of Barossa Valley, destemmed and wild fermented on whole berries. Once dry, sealed up with the cap worked a little to extract those little goodies. 15 days on skins, gently pressed to neutral French oak hogheads and stainless. Maturation 11 months and bottled unfined and unfiltered. Wild fermented with zero adds apart from minimal SO2 on bottling.
Nose is full of dark black notes, gun metal, moutain herbs, thyme and rosemary, genourus deep broody herbous palate, linguring licorce like spice.
